Cabalen Restaurant is one of several branches that opened its doors nationwide. They are known for serving buffets consisting of specialties from Pampanga at very low prices. Their servers are hospitable and are very solicitous even though it’s a buffet. The restaurant itself has a wide entrance without any doors to make it more inviting. Cabalen Cebu serves my favorites like kare-kare (oxtail stew in peanut sauce), kalderetang baka, dinuguan, sisig, relyenong bangus and burong hipon. These are traditional food from Pampanga that I could never get enough of. In addition, they also serve Cebuano lechon, pig roasted with special herbs to perfection, the skin so sinfully crispy that made me go back for seconds and thirds and ad infinitum. The buffet spread is so packed with choices and since Cebu is a seaside city, they also make the most delicious seafood dishes and are included too in the offerings. The best thing about is that all these comes only at about Php298 (around US$7). I do not know of any other restaurant which charges as low as this and we this many choices. The food is always replenished and so it’s hot from the stove.
