So we had dinner for the first time in this restaurant. I have noticed that they have limited different food served in the table and some were common to my taste. However, the place was clean and organized. I took bulalo soup, dinuguan, lechon kawali, liempo and my all-time favorite garlic rice. After 10 minutes, the glasses filled with iced tea were served. As we started eating, we noticed that some food were not that tasty, although the dinuguan was the only food we could think was better. When I took another food on the buffet table, I saw a big house fly hovering over the foods and it made me resorted to get only the chocolate-dipped marshmallows instead. I didn't expect to see this in a restaurant inside SM Cebu. Though I didn't report to the staff. Yet, the chocolate-dipped marshmallows were good.

The food was great! I especially liked the Chicken and the Pork Hamonado. Gising-gising was also good but I still like the version of Recipes for that. The other dishes tasted so-so though it gave me the feeling of home-cooked which for me is very much acceptable since I’m now living in a place where home cooking is a thing in the past. Another dish that I attacked a lot was the catfish (hito) because I missed it very much. We used to eat that a lot when I was young but lately, I didn’t have the chance to eat it anymore. Although their cooking was dry (it is supposed to be soft and juicy), the flavor was still there.
Almost every region in the Philippines has a specialty dish. But the queen of cuisine in this country is Pampanga, a region located in Central Luzon. Ladies from Pampanga are known as good cooks and the Kapampangans (people from Pampanga) are known to be hospitable. Cebu on the other hand is known for their slow-roasted lechon (an entire pig skewered in a bamboo and roasted in an open pit). I was therefore glad to trek to the recently opened Cabalen Restaurant in Cebu to sample the best of Pampanga cuisine fused with a little bit of Cebu.

Cabalen Restaurant is one of several branches that opened its doors nationwide. They are known for serving buffets consisting of specialties from Pampanga at very low prices. Their servers are hospitable and are very solicitous even though it’s a buffet. The restaurant itself has a wide entrance without any doors to make it more inviting. Cabalen Cebu serves my favorites like kare-kare (oxtail stew in peanut sauce), kalderetang baka, dinuguan, sisig, relyenong bangus and burong hipon. These are traditional food from Pampanga that I could never get enough of. In addition, they also serve Cebuano lechon, pig roasted with special herbs to perfection, the skin so sinfully crispy that made me go back for seconds and thirds and ad infinitum. The buffet spread is so packed with choices and since Cebu is a seaside city, they also make the most delicious seafood dishes and are included too in the offerings. The best thing about is that all these comes only at about Php298 (around US$7). I do not know of any other restaurant which charges as low as this and we this many choices. The food is always replenished and so it’s hot from the stove.
